Ripe agave is roasted in an earthen horno carved into a granite hillside, then milled with a horse drawn molino and fermented in open air wooden tanks with ambient microbes and yeasts before double distillation in small copper stills. Slate and mineral notes lead into tropical fruit and citrus, with rose petal, lavender, tarragon, and pea shoot nuances. The finish is long
